MA in Culinary Sustainability Studies
Course Overview
The MA in Culinary Sustainability Studies at LSCAHM is a UK Level 7 postgraduate programme running one year full-time or two years part-time on-campus, online or by distance learning. The course examines how professional kitchens can lower environmental impact through provenance-led menu design, waste reduction, seasonal sourcing, plant-forward technique and measurable carbon accounting, aligned with Craft Guild of Chefs and Institute of Hospitality guidance.
By graduation, students have produced a supervised dissertation examining a defined sustainability challenge in a UK culinary setting, backed by primary evidence from kitchens, suppliers and diners, and a plan for implementation ready for a head chef, restaurant group or food business to adopt.
