BA in Culinary Nutrition
Course Overview
The BA in Culinary Nutrition is a UK Level 6 honours degree running three years full-time, with part-time and accelerated routes available inside the LSCAHM Culinary Arts and Gastronomy department. The programme is aligned with Craft Guild of Chefs technical standards, City and Guilds professional cookery progression and Institute of Hospitality menu-and-guest-experience benchmarks, and includes a structured year-two placement in a health-led restaurant, hospital catering group, hotel wellness team or food-brand R&D kitchen.
By graduation you can design nutritionally balanced menus, analyse recipes for macro and micro-nutrient profile, work to allergen and special-diet governance, brief chefs on health-led cookery, and close with a final-year capstone or dissertation suitable for development chef, nutrition-led menu consultant and wellness catering shortlists across the UK sector.
Assessment blends kitchen practicals, sensory panels, recipe analysis reports, allergen governance case studies and a final-year dissertation or capstone. Placement is co-managed by the LSCAHM careers service alongside your named tutor.

Why Study at LSCAHM
LSCAHM is a specialist division of Harold International College of London teaching in small, tutor-visible cohorts. Culinary nutrition sits between professional cookery and applied science, and needs weekly tutor time in both the kitchen and the sensory lab.
Central London places wellness restaurant groups, food-brand R&D teams and the Craft Guild of Chefs within a short tube ride of every classroom, and LSCAHM refreshes the culinary nutrition curriculum against UK food-safety, allergen and menu-labelling guidance each year.
Every intake, on-campus or remote, joins the same weekly seminar structure with named programme-tutor support, and LSCAHM refreshes the culinary nutrition curriculum annually against Craft Guild of Chefs, Institute of Hospitality and current UK food-safety and labelling guidance.
