MA in Professional Cookery
Course Overview
The MA in Professional Cookery is a UK Level 7 research-informed Masters degree from the LSCAHM Culinary Arts and Gastronomy department, running one year full-time or two years part-time across on-campus, online and distance learning routes. The programme is calibrated to Craft Guild of Chefs senior benchmarks, Royal Academy of Culinary Arts standards and Institute of Hospitality leadership themes used across UK Michelin-starred kitchens, luxury hotel groups and restaurant collections. Students engage with contemporary gastronomy, applied culinary research, structured menu leadership and sustainable sourcing, alongside a supervised dissertation, capstone or sponsor consulting project that sits inside a real working kitchen brief a head chef, restaurant group or hotel operator is willing to review.
By graduation you are leading a professional kitchen concept from menu philosophy through to costed, service-tested delivery, defending a research-informed dissertation or sponsor consulting project, and articulating a personal professional cookery voice in front of a senior industry panel drawn from restaurant collections, hotel groups and culinary consultancies. The programme treats cookery as an evolving practice discipline: recipe becomes protocol, protocol becomes menu, menu becomes signature style, and signature style becomes a defensible piece of applied culinary research that a professional employer can read, question and act on.
